Truly Scrumptious Carrot Cake (Gluten-Free)

Truly Scrumptious Carrot Cake (Gluten-Free)

I absolutely love carrot cake. I think it tastes great on it’s own, with a cup of tea, or even as a dessert with some vanilla ice-cream! Therefore it was extremely important to me to perfect a gluten-free version without losing any moisture or taste – I think this recipe actually tastes better than most carrot cakes I have had before going gluten-free! It is also under 300 cals a piece so you don’t have to feel guilty afterwards!

I decided to make two cakes and took one round to my Fiance’s parents (his mum is Coeliac) the other weekend. We went to collect the plate we took it on a few days later and they had already polished it off! However, his mum was not best pleased –  it turned out his dad (who is not Coeliac) ate most of it and she hardly got any! So ladies – hide it from the men!

Cupcakes and Tears

Cupcakes and Tears

On Friday 9 March 2012 it was my last day working as Marketing & Communications Coordinator at The Forum in Norwich. I worked there for just over a year and absolutely loved it – my job, the building, the events, the staff, the surroundings, and all the wonderful people I met working there. But my career goal has always to become a Marketing Manager – and it was finally time to put my brave face on and take that step!

Gluten Free Vanilla Slices

Gluten Free Vanilla Slices

I love cakes and pastries but I didn’t think it would be possible to ever have puff pastry again on a gluten free diet. However, this recipe from my mum shows that you can. It does take a bit of time and can be a bit tricky – but boy was it worth it!

Home-Made Gluten Free Yorkie’s

Home-Made Gluten Free Yorkie’s

When I cook a roast on Sunday’s I cannot live without Yorkshire puddings! If I don’t have time (or can’t be bothered) I usually buy the DS gluten free Yorkshire puddings which are so quick – you take them out the freezer put straight in the over and in 3 minutes they are done! However, my mum has come up with a fantastic home-made gluten free Yorkshire pudding recipe which I just had to share with you – they taste amazing…

Lacking energy on the Gluten-Free Diet?

Lacking energy on the Gluten-Free Diet?

One of my friends has recently started following a wheat & gluten free diet and DM’d me on twitter  for some advice, as he was struggling with the energy/carb intake and said that he felt constantly hungry. He asked what I did to keep my energy up on a gluten free diet and if I found it hard to adjust.

I thought I would share with you all the email I sent back to him (which I filled with some gluten-free tips, some products that I love and what I normally eat to keep my energy up) incase it may help any of you out there following this diet as well…

La Tasca’s New Gluten-Free Menu

When I heard that La Tasca had launched a new gluten-free menu my OH and I couldn’t wait to go and try it out – not to mention the gluten-free beer! We booked a table for a Friday night and were really excited to finally have another restaurant in Norwich offering a range of gluten-free options.

Wheat & Gluten Free Lemon Cheescake

Wheat & Gluten Free Lemon Cheescake

I decided to try making a gluten free lemon cheesecake at the weekend as I found a pack of  dejected Tesco’s Free From Plain Digestive Biscuits nestled in-between some cans of tuna and spices at the back of my cupboard. I have never made a cheesecake before, let alone a gluten-free one but it was actually very quick and easy.

Paolo’s Gluten-Free Pizzas

Paolo’s Gluten-Free Pizzas

Freshly made pizza is one of my favourite things. My OH and I had been surviving on buying ready-made gluten-free pizza bases and then adding our own toppings. These ready-made bases are ok but they look like the pizzas I used to have when I was a child – a flat disc with little holes in, no crusts and not a whole lot of taste – nothing compared to the taste of a freshly made pizza dough!

However, a month or so ago my OH and I visited Paolo’s in Norwich after reading on Twitter that they made their own gluten-free pizza bases.

Lobster Love

Lobster Love

Phoebe: Hang in there, it’s gonna happen.
Ross: What? Okay, now how do you know that?
Phoebe: Because she’s your lobster.
Chandler: Oh, she’s goin’ somewhere.
Phoebe: Come on, you guys. It’s a known fact that lobsters fall in love and mate for life. You know what? You can actually see old lobster couples walkin’ around their tank, you know, holding claws like…

This Valentine’s Day my OH and I have decided to save money by staying in and not buying gifts, as we are currently saving for the holiday in Kefalonia we have booked for two weeks in July (counting down the days already…!)
